A Wonderful Easter Meal

So I hope everyone had a FABULOUS Easter!

We ended up having extra people, which made it fun.  I love a houseful at the holidays.

  • Spiral Sliced Ham

Easter Appetizer Recipes

Directions

Thinly slice a baguette; arrange in a single layer on a baking sheet. Brush with olive oil and sprinkle with salt. Bake at 425 degrees F until lightly golden, about 7 minutes. Let cool slightly.

Toss halved asparagus spears with olive oil, salt and pepper on a baking sheet. Roast at 450 degrees F until slightly crisp, 7 minutes. Spread softened butter on the toast rounds. Top with sliced prosciutto and the roasted asparagus.

Directions

Mash 6 hard-boiled egg yolks, 1 1/2 tablespoons mayonnaise, 2 teaspoons yellow mustard, a dash or two of hot sauce, and salt and pepper. Mix in 1 tablespoon barbecue sauce. Fill the egg whites with the yolk mixture; top with sliced scallions and paprika.

In the Kitchen with the naked chef

So my husband decided to show me how to make mushroom risotto.


We started out with caramelizing onions and fresh white mushrooms with 1/2 stick butter and 2 tablespoons of olive oil. Then we added the Arborio/Risotto rice and slowly added 1 cup of Chicken Broth 4 times (32 oz.) as it absorbs into the rice.  Sirring occasionally.
Simmer til all liquid is absorbed and rice is fluffy.

Top with Fresh Parmesan Cheese for extra YUM factor!

Chicken-How do you like yours?

Well I cooked tonight, chicken with cheesy broccoli rice.


The chicken was so moist.  I put Crushed Garlic, Peppercorn and Chipotle rub on it. YUM!


So how do you like your chicken?  I usually like it breaded in panko and baked.  Side dishes are usually mashed potatoes and buttered niblet corn from Green Giant.

Cheeseburger cheeseburger

So my husband has gotten sooo good at making frozen burgers taste PHENOMENAL!!

Tonight we had bacon and cheddar burgers. The bacon was crispy and the cheese was gooey and it was dripping juices.  Hands down one of the best I've had.

I love my burgers now with caramalized onions.  I have tried to expand my horizons.  Would love to try the California burgers with the avacado, etc.

Extreme Couponing

This show is on tonight on TLC and I would love to get input on this whole craze.

I did couponing before our last trip to go grocery shopping.  We shopped at both Publix and Kroger and total savings was about $78.  Not too bad, however, we spent the total amount that we usually do.

A great website that I have gotten daily tips is addictedtosavings.com.  There are tips for beginners which is exactly what I needed.

My first step is to get a zippered binder and organize coupons in baseball card holders. I need to classify them by section.  I.E. Frozen foods, deli, etc. I know my biggest battle is the whole staying organized thing.  As you can see by all my Pampered Chef stuff all over my house.  LOL

Another way to organize is to put all the inserts by date and whether it's RedPlum, SmartSource or P&G.  I've done this also with the back ups of coupons.  I will post pics if you need a sample.

Celebrating National Grilled Cheese Day

What to have for dinner?  Why not have a grilled cheese? That's what my family and I did.

Steve had his with fresh tomatoes on it.  Ava and I had the basic topped of with Tomato Basil Soup.  Yum!

Growing a Veggie Garden

Hey Y'all!!

We are growing a veggie garden in our backyard for the 2nd time!

We started from the beginning with the seedlings. Now just to wait to get them in the ground.

We have the following growing:
Yellow Squash
Green Beans
Radishes
Banana Peppers
Red Bell Pepper
Serrano peppers
Cayennes
Jalapenos
Eggplant
Basil
Italian Flat Leaf Parsley
Oregano

There's nothing like being able to grow your own produce in your backyard.  Last year, we were able to can a whole bunch and then still able to give to neighbors. I will update with pictures as I get them.

My Favorite Meals and what to drink with them

OK so here it goes.  My first "Food and Wine" post.  Inspired by "Julie & Julia."  :)

Tonight's meal consists of a Rotisserie Chicken from Kroger.  On sale for $4.99 and had a $1.00 of coupon.  With this, we are having stuffing and Green Giant Niblet Corn in Butter Sauce.  My fave for during the week.  We always pick up the bagged veggies because they are always on sale.  Easy to store.

I'm pairing this with Arbor Mist Peach Chardonnay.  A friend bought me this for birthday and is great for this time of year when it's hot out.

I really want to start cooking more.  I have plenty of tools, now I just need to buckle down and learn the fast, fun easy meals to make.
